The 15th recipe in the series is Mocotó Raízes, by participant Cyntia Rocha. It's that complete meal, which delights the palate and gives you enough sustenance to enjoy all night long. The dish is an option for June festivities.

Ingredients
2 kg of mocotó
1 pepperoni
300 g of dried meat
1 kg of cooked cassava
200 g of fried bacon
1 red pepper
1 yellow pepper
2 onions
4 cloves of garlic
1 drizzle of oil
Paprika to taste
Chimichurri to taste
Chef's seasoning to taste
Salt to taste
Chives
Coriander
Pepper to taste
1l of water or until it covers the ingredients in the pan
Preparation method
Mocotó with creamy broth and striking flavor

In the pan, add a splash of oil and add the chopped pepperoni and let it fry well. Add the onion and let it brown. Then add the garlic, peppers and dried meat. Mix everything very well. Also add all the dry seasonings.
Place the mocotó in the pan and stir for approximately 5 minutes. Add water until it covers all the ingredients and bring to pressure for about 1 hour. After the pressure has released, open the pan, add the chili pepper and add salt. Blend the cooked cassava in a blender until it forms a cream and add it to the pan. Mix well, adjust the salt and finish with chives, cilantro and crispy bacon on top.
