The preparation of the largest dried meat paçoca in the world has already started in Boa Vista. This year's goal is to reach 1,600 kg of the delicacy, which is the main attraction of Boa Vista Junina 2026. To reach the record, the company responsible for preparing it needed to use the meat of more than 10 cattle.

Boa Vista Junina, known as the Biggest Arraial in the Amazon, starts this Saturday (13th) and runs until Friday (19th). The weighing and free distribution of paçoca will take place next Tuesday (16), at Praça Fábio Marques Paracat.
Production requires a large amount of ingredients. According to Pedro Pinheiro, owner of Indústria de Alimentos Pinheiro and responsible for preparation, a 500 kg ox yields an average of 150 kg of meat after boning.
🥘🍌 The dried meat paçoca has indigenous origins. Unlike the sweet version, made with peanuts, the regional delicacy is savory and traditionally consumed with banana. It is produced by pilling flour and meat, which are sautéed with onion and butter or cooking oil.
During the dehydration and frying process, the meat loses weight by eliminating liquid and fat. Therefore, according to him, for every kilo of paçoca ready, two kilos of fresh meat are needed.
"It's a product that, in addition to work, you have to have love, because sometimes we leave here late at night due to preparation. There are 15, 20 days in which you have to have a lot of dedication, a lot of dedication for everything to work out", highlights Pedro Pinheiro.
The company was also responsible for the paçoca in 2024, the year in which Boa Vista entered the Guinness Book, the Book of Records, weighing 1,356kg. Preparation lasts up to 20 days and involves around 30 employees, divided between frying, mixing, support and administration.
To give the dish a more pronounced flavor, the meat passes through a wood-fired oven. The preparation steps include boning, salting, dehydrating, frying and mixing the meat with cassava flour.
In the final phase, the team uses almost 500 bags of onions and up to 20 buckets (with 15 kg each) of flour. To ensure food safety, the team follows strict inspection, hygiene and use of Personal Protective Equipment (PPE) rules.
🌽 Free distribution of the dish began in 2015, when Boa Vista city hall served 500 kg to 20 thousand people. Since then, the weight of paçoca has increased with each edition of the festival.

During the seven nights of the party, Boa Vista Junina will bring together 40 musical attractions, 38 of which are local artists. The festival will also have two free national shows. Singer Dorgival Dantas performs on Wednesday, June 17th. On Thursday, the 18th, the attraction is the country duo Marcos & Belutti.
The traditional square dancing competition takes place on the 14th and 15th of June. From 8pm onwards, ten gangs will perform on the Chiquinho Santos stage with themes that value regional culture.
