The recipe, which originates from the slavery period, was adapted over time and became a popular delicacy in Rio Grande do Sul. "It's the most traditional dish of our winter. And the cold, precisely, is the reason we like mocotó so much", says retired Ronaldo, one of Mercado Público's most traditional customers. In one of the cafes where it is served, the mocotó is usually ready around 7am. At noon, demand increases and reaches around 60 kg sold per day. Reinforced plate to face the cold According to cook Giovanni, responsible for preparation, the secret of the dish is attention to the process and the products used. And he guarantees: mocotó is one of the best options for warming up the body. "You come here with a coat and leave without it. The mocotó heats up a lot. It cooks for 24 hours, with hygiene and quality products, all 100% beef giblets, with lots of seasoning", he says. The dish has side dishes such as sausage, mondongo (beef stomach), olives, eggs, seasonings and can be served with bread. The thicker broth is also cited by consumers as a source of heating on cold days. In one of the snack bars visited by the report, mocotó is sold for R$39, with side dishes. There is also the option of a larger portion, which serves two people, for R$60. Gaucho tradition Consumption of the dish in the morning still divides opinions, but it has a strong presence in local culture, especially in winter. For many customers, it is a complete meal, which replaces a conventional breakfast and helps to face the cold in the early hours of the day. "It's very good, it helps me work.
