This Sunday's Nosso Campo (14) teaches you how to prepare a delicious pé de moleque pie. Find out how to do it:
Ingredients:
For the sablée dough:
200 g of flour;
2 eggs;
70 grams of sugar;
50 grams of butter.
For the filling:
100 g unsalted roasted peanuts;
100 g of sugar;
2 eggs;
100 g of butter.
For the French caramel:
100 g of sugar;
100 g of butter;
25 g of cream;
100 g unsalted peanuts.
Preparation method
Filling
In a processor, add the sugar, peanuts, eggs and butter;
Reserve in the refrigerator.
Sable dough
Mix the flour with the butter until you get a sandy texture;
Add eggs and sugar to the flour and butter mixture;
Knead until you reach a homogeneous texture;
Reserve for at least 30 minutes in the refrigerator.
French caramel
In a pan, add the sugar over medium heat until caramel forms;
Add the cream and butter and set aside in the refrigerator;
Roast the peanuts over high heat.
Assembly
Roll out the sablée dough into a rectangular shape;
Preheat the oven to 180°C;
Add the peanut cream to the base of the dough and bake for 20 to 25 minutes;
Remove from the oven and let rest for 15 minutes;
With the French caramel already cold, add the previously roasted peanuts.
