For the filling: 100 g unsalted roasted peanuts; 100 g of sugar; 2 eggs; 100 g of butter. For the French caramel: 100 g of sugar; 100 g of butter; 25 g of cream; 100 g unsalted peanuts. Preparation method Filling In a processor, add the sugar, peanuts, eggs and butter; Reserve in the refrigerator. Sable dough Mix the flour with the butter until you get a sandy texture; Add eggs and sugar to the flour and butter mixture; Knead until you reach a homogeneous texture; Reserve for at least 30 minutes in the refrigerator. French caramel In a pan, add the sugar over medium heat until caramel forms; Add the cream and butter and set aside in the refrigerator; Roast the peanuts over high heat.
